Even though I live in the Midwest I've never been to a rodeo. We have them in my state and surrounding ones. I should put that on my bucket list and also to ride a bull bareback.

Cliff diving. I haven't done it but I know people who have, and it seems safer than BASE jumping (which frequently results in injury or fatality).
Swim with dolphins or kayak with orcas (killer whales)?
(Yes, orcas are technically the largest species of dolphin, but they're waaaay different so I'm going to ignore that.)
