I think Mary is correct in that Pairs and Ice Dancers tend to be a bit older on average than the Singles skaters. I doubt she meant 'elderly' literally. 33 is elderly or ancient in many elite athletic sports such as tennis, and gymnastics.
 
In SOME sports. Not in most--mid-twenties is not elderly for the majority of the summer sports. (And in all the Olympic equestrian disciplines, mid-twenties is still kids.)

It's true, though, the dancers are often older--mid-twenties and even thirties. It doesn't destroy joints the way pounding out multirotational jumps since you were ten does. (I seriously think singles skaters would last longer if they learned later. Their bones aren't remotely fused, and it can't be good to slam all that weight onto them over and over before they're even fully formed.)

I don't think singles skaters can hold off on learning jumps. Jumps are very natural for kids' bodies to handle. Kids can easily jump off of tables, stairs and take falls and their bodies won't ache like crazy the next day. Once a kid gets older, the ability to jump off of things become diminished if the kid hasn't been doing it all along.
