I'm assuming measuring the widest part of my heel, the diameter of the half-circle it makes when tracing it out? I measured 70 mm / 2.76 inches.

Yes, that's what I mean. And yes, manufacturers are bad at providing exact stats of their boots. But given that measurement, you have both wide heels and foretoot, so extra wide Jacksons should be your best bet.
However, I would recommend you try the men's models, if available, as those should be slightly wider too, and stiffer, which is good for you. They just don't come in white. You might still need to stretch the forefoot a bit, but at least much less so than other stock boots.
