That's how I buy Oreo cookies. They now have quite a few non-chocolate varieties. But I would think ice cream between cookies would be messy to eat? With a spoon in a bowl, perhaps?

It takes real perseverence
to find one these days

Ice cream sandwiches are a longstanding tradition. The classic is vanilla ice cream and chocolate cookies. You probably haven't noticed them because of the chocolate.

They aren't messy to eat as long as the cookies are soft so they don't crumble as you bite into them.
