I'll try to answer, but some will probably have better explanation.
1. Shomita came from Yulia lipnitskaya, she called him Shomita once when she was commentating on a competition. I think it's because Shoma is small? I could be wrong on this as I can't remember if Yulia came with Shomita or something else.
No-no-no, Lipnitskaya called him Shomachka!!!

The suffix '-ochk' (its not '-achk' actually, it's just the way Russians pronounce the unaccented vowel 'o') is used to form diminutives, so it's basically the same as 'Shomita' in Spanish, on which see Arriba's post above.

to Itsuki-kun being translated to Mr. Tree, very typical google-logic translation: Itsuki= tree; kun= male (Mr.), thus Itsuki-kun= Mr. Tree
