Never heard of cinnamon candied apples? They were the most common kind of candied apples when I was younger but come to think of it I haven't seen them in a while. Instead of caramel you dip the apples in red, cinnamon oil flavored sugar and corn syrup that is cooked to the hard crack stage. It's an apple covered in a red cinnamon lollipop.

Piel - I saw on a Food Network show that candied apples are much more popular in the east, but very rare in the midwest (we eat caramel apples). This is probably why I haven't heard of the cinnamon ones.
